Roof Stoop Sundays with 1to1 Foods

We are so excited to be partnering with 1to1 Foods on their signature program, Roof Stoop Sundays, on Sunday, October 2! You can choose Buzzin’ Brunch , 2:30–5pm, or Sunset Dinner, 6–8:30pm. The events will be be held at the picturesque rooftop farm, Brooklyn Grange, in Sunset Park. Three composed courses will be plated and served on a tray. Each ticket costs $90 and covers your meal as well as three specialty drinks.

Sweet Potato Chaat
A sweet-tangy hors d'oeuvre that comes from roadside stalls and carts across India, Pakistan, Nepal and Bangladesh. Golden-fried sweet potato tossed with cool yogurt, pomegranate, beetroot, radish, carrot, tamarind drizzle and mint chutney.

Chicken Karahi OR Eggplant Karahi
A dry-fried tomato-based curry that takes its name from the wok-like pan it is cooked in, Karahi originated along the silk route in the mountainous Khyber Pakhtunkhwa province of Pakistan, adjacent to Afghanistan. It is distinguished by its fragrant spices, and is garnished with cilantro, green chili peppers, and slivers of ginger. Prepared with Halal Chicken or Brooklyn Grange Fairytale Eggplant. Served with Basmati Zeera Rice.

Sweet Potato Chaat
A sweet-tangy hors d'oeuvre that comes from roadside stalls and carts across India, Pakistan, Nepal and Bangladesh. Golden-fried sweet potato tossed with cool yogurt, pomegranate, beetroot, radish, carrot, tamarind drizzle and mint chutney.

Chicken Karahi*
The mountainous Khyber Pakhtunkhwa province of Pakistan, from which Karahi originates, is adjacent to Afghanistan and home of the Khyber Pass, part of the ancient Silk Road and a vital trade and military route between Central Asia and the Indian subcontinent. Karahi (or kadai) would originally be prepared outdoors on an open flame and takes its name from the wok-like pan it is cooked in. It is distinguished by its tomato base and fragrant spices, and is finished with cilantro, green chili peppers, and slivers of ginger.

We are excited to welcome you to a very special Ruby's Kitchen brunch event on Sunday, May 29, 12pm – 3pm.

The event will be a held at a different location from our usual, but still in Williamsburg, Brooklyn, at the corner of Roebling and North 6th Streets. We will email you the address after you register.

The Haleem Bar will have a simpler menu than our brunch tasting menus. Instead of the whole group sitting around the table for a meal, this will be an indoor/outdoor picnic, with self-serve stations for the various menu items and informal seating provided indoors and outdoors.

The pricing is also different — there is a $20 per person suggested contribution to help us cover costs, payable via Venmo to @rubyskitchen. Regardless of whether you can pay that amount, we do ask for an RSVP so we can accurately estimate how much food to prepare.

Iced Rose Lassi
A light, refreshing, aromatic blended drink with yogurt, water, Jam-e-shirin rose syrup, and a pinch of sugar and salt.

Papri Chaat
A savory South Asian snack served as an appetizer at roadside stalls in India, Pakistan, Nepal, and Bangladesh. Savory chaat is a medley of potato, chickpeas, yogurt, tangy-salty spices, sour Indian chili, and tamarind, and is garnished with fresh green coriander leaves and sliced onion. Served as an hors d'oeuvre on fresh, crispy papri crackers.

Hyderabadi Haleem w/ Mutton*
Originating from the 10th century Baghdadi dish Harees, Haleem was evolved into the modern-day mega canonical dish in the Indian city of Hyderabad. It is a flavorful stew featuring wheat, barley, lentils, and meat, and is garnished with lime, ginger, and fried onion.

A layered dessert comprising pureed dried apricots, custard, whipped cream, almonds and pistachios that lends a cooling festivity to a warm holiday meal.

We are very excited to announce our first Ruby's Kitchen brunch gathering this Fall: on Sunday, October 17, 12:30-2:30pm. The brunch will be held indoors at our Williamsburg, Brooklyn, location, and proof of vaccination will be required from all attendees.

In celebration of new beginnings and the beautiful Fall weather in New York City, we are revisiting the breakfast ("naashta") theme! The following dishes will be served together, along with fresh puff poori, hot chai and iced yogurt lassi.

Suji ka Halwa
A simple semolina dessert that is beloved across the subcontinent, prepared for offerings at Hindu festivals as well as Muslim holidays such as Eid.

Poori
A thin, fluffy, fried bread made from unleavened whole-wheat flour.

Chicken Nihari
The word Nihari originates from the Arabic word for morning, Nahar. It is a stew historically eaten by Nawabs in the Mughal Empire—in Delhi, Bhopal, and Lucknow—for breakfast after dawn prayers. After independence and partition in 1947, large numbers of Urdu speaking Muslims from northern India migrated to Karachi and Dhaka, bringing with them this culinary treasure. Prepared with chicken.

Aloo ki Bhujia
A potato curry cooked with tomatoes, turmeric, chilies, spices, dill, and lemon juice.

Cholay
A chickpea curry made with green chilies, onion, ginger, garlic, tomatoes, fresh cilantro, and a blend of spices.

Anda Bhurji
Scrambled eggs prepared with chopped sautéed onions, tomatoes, chilies and fragrant spices.

Mango Achaar
Pickle made from anaerobically fermented mangoes and a mixture of spices.

Yogurt Lassi
A blend of yogurt, water, mild spices, and a touch of salt, served chilled.

Dahi Barray
This festive street appetizer comes from the heart of India: one of its first recipes can be found in Manasollasa, a 12th century Sanskrit encyclopedia from Karnataka. Graham flour fritters served in yogurt with tamarind chutney.

Chicken Biryani
Originating among the Muslim communities of the Indian subcontinent, this dish is prepared by layering Basmati rice and meat curry cooked with Indian spices. Served with raita and garnished with mint, cilantro, and a hint of lime. (Vegetarian option available upon request)

Ras Malai
Ras Malai is a dessert originating from the eastern regions of the Indian subcontinent, possibly Bengal or Odisha. Its name is the Hindi cognate of Bengali— rosh, meaning “juice”, and molai, meaning “cream”. Dumplings made from powdered milk soaked in sweetened, thickened milk, flavored with cardamom, and garnished with almond flakes.

Bun Kabab
Bun Kababs originated from the urban centers of Pakistan. They are usually sold from roadside stalls, side street vendors, and fast food restaurants. Toasted sliders with patties made from egg whites, minced lamb, and lentils, and served with tamarind chutney, onions, cilantro, and green chilies. (Vegetarian option available upon request.)

Maash ki Daal w/ Red Beet Rice (vegan)
Urad, or black gram, originated in South Asia, where it has been in cultivation from ancient times and is one of the most highly prized pulses of India. Maash daal, which is the white split bean that comes from urad, prepared with Indian spices, and served over vermillion beet rice, with a garnish of chutney and onion-avocado salad. According to Ayurvedic teaching, beets improve blood flow and cleanse the liver, stomach, and intestines. They provide a natural glow to the skin and help prevent cancer.

Channe ki Daal ka Halwa
Halwa is a simple dessert that is beloved across the subcontinent, prepared for offerings at Hindu festivals as well as Muslim holidays such as Eid. A light, sweet, and subtle dessert made with Channa daal, a split chickpea lentil, and flavored with cardamom.

This February, we’ll be back with a custom menu that includes traditional favorites and new culinary explorations:

Fresh Orange Juice
Oranges only seasonally appear in Pakistan, during the winters. We'll serve them freshly squeezed, with a touch of salt and black pepper.

Daal Anda Bun Kabab
Toasted sliders with patties made from egg whites, minced lamb, and lentils, and served with tamarind chutney, onions, cilantro, and green chillis. Bun Kababs seem to have originated from the urban centers of Pakistan. They are usually sold from roadside stalls, side street vendors, and fast food restaurants. Daal Chawal
The origin of Daal Chawal—lentils served over basmati rice, along with chutney and salad—lies in Nepal, at the foot of the misty Himalayas. Around the Mount Everest base camp, Dal Bhat is the only meal served in food stalls. It is so closely related to mountaineering that climbers often figure out each day’s trek by the number of servings needed to complete it.

This December, we’ll be back with a new custom menu that includes traditional favorites and new culinary explorations:

Spinach Pakora Hors d'Oeuvre

Hot, crispy, and flavorful, this famous winter fritter is made with gram flour and fresh spinach leaves.

Chicken Corn Soup

A tribute to Chinese cuisine, this traditional chicken corn soup is a staple in most Pakistani households, served with red chili paste and green chillies in vinegar. It never fails to warm and soothe and is the perfect ice-breaker for a holiday brunch.

Aloo Samosa w/ Khatti Meethi Chutney

A Ruby's Kitchen classic, this appetizer is a simple, petite fried pastry stuffed with potatoes and peas, and served with a sweet and tangy sauce made from tamarind.

Shrimp Biryani

Originating among the Muslim communities of the Indian subcontinent, this dish is prepared by layering Basmati rice and shrimp curry cooked with Indian spices. Served with raita and garnished with sliced, sauteed onions with a hint of lime. (Vegetarian option available upon prior request.)

Khubani ka Meetha

A layered dessert comprising pureed dried apricots, custard, whipped cream, almonds and pistachios that lends a cooling festivity to a warm holiday meal.

Doodh Patti Chai

Evocative of a roadside cafe, this energizing hot beverage is made by boiling milk with a touch of sugar and Indian chai. (Lactaid can be substituted.)

Autumn Energizer Drink
Apple, pear, orange, ginger, cinnamon

Dahee Barre
This festive street food appetizer comes from the heart of India: one of its first recipes can be found in Manasollasa, a 12th century Sanskrit encyclopedia from Karnataka. Lentil dumplings served in yogurt and tamarind chutney.

Seasonal Fruit Chaat
Fresh, sweet and tangy mixture of finely cut fruit with chaat masala and a hint of sea salt.

Hyderabadi Haleem (Lamb)
(Vegetarian variation available)
Originating from the 10th century Baghdadi dish Harees, Haleem was evolved into the modern-day mega canonical dish in the Indian city of Hyderabad. It is a flavorful stew featuring wheat, barley, lentils, and meat, and is garnished with lime, ginger, and caramelized onion. Cooked to mark the importance of the Islamic months of Ramadan and Muharram, Haleem is so substantial and fulfilling a dish that it cannot be combined with a competing entree.

Lauki ka Halva w/ Vanilla Ice Cream
A light, sweet, and tart dessert made with grated bottle gourd, and flavored with cardamom

Kashmiri Chai
Gunpowder tea with milk, star anise, and cardamom

Digestif
Pinch of fennel, roasted coconut, rock candy
